St Catherine’s Hospice – ‘Flavours’ Bistro Transformation

Interiors at Nine to Eleven was appointed to reimagine the existing canteen at St Catherine’s Hospice in Scarborough — transforming a tired clinical space into a vibrant, welcoming bistro environment designed to support emotional wellbeing, relaxation, and connection.
The brief called for more than just a makeover. We were tasked with creating a multifunctional space where patients, families, and care teams could take a moment to reset — while also attracting external visitors through an inviting, café-style atmosphere. Our response was to introduce a Sevillian-inspired Mediterranean concept, rich in warmth, character, and uplifting energy.
Drawing on the colours and textures of southern Spain, the design features Moorish-style tiles, bougainvillea-laden balconies, terracotta wall-hung planters, and a fresh, joyful colour palette intended to spark positivity

The space was also completely rebranded and relaunched as ‘Flavours’ — a name that perfectly complements the new theme and invites visitors to engage with the space on both a sensory and emotional level.
As both lead interior designers and project managers, we handled every detail — from spatial planning and FF&E specification to onsite coordination and visual identity. We co-ordinated the project teams including joinery, painting, screen printing, banquette seating, furniture and soft furnishing fit out.
This transformation not only enhances day-to-day life within the hospice but also creates new revenue opportunities and a deeper connection with the local community.
